Les Salisbury Jr.
As a lad, Les began fishing for brown shrimps on Morecambe bay with his dad, learning the ropes, judging the tides and working in the harshest of northern weather conditions.
With a growing reputation for quality, he later sold fish and shrimps on markets in Ulverston, Gretna, Barrow in Furness and Penrith.
He was keen to expand the business further so Les and his Father took the company to Borough market in London.
Devoting four decades of his life to fish Les has built one of the most respected fish markets in the UK.
Leslie Salisbury Sr.
The late Leslie Salisbury was a fisherman on Morecambe bay for over 50 years.
With a healthy respect for the sea and its treacherous conditions, he learned his craft from old Jack Butler on Morecambe bay, who fished the sands using a traditional horse and cart.
Les' reputation for fishing and establishing the biggest and most respected potted shrimp industry in the world is testament to his hard working ethic. His Legacy lives on within the fabric of Borough market.

Max the stall manager leads the crew of talented fishmongers on Furness Fish Markets.
Overseeing the running of the stall on a daily basis, using years of extensive knowledge to select only the finest fish. He runs a tight ship!
Jessel, Peter and Matt are all talented fishmongers offering a wealth of knowledge to customers and friendly chat.
Simon and Darius' expertise lies with quickly and skillfully shucking oysters and advising on our range of quality caviar.
You'll find chef Ryan and his team of dedicated cooks on the hot counters, preparing from scratch, and serving the delicious range of hot food available daily.
Helen is the newest member of the team; office based, looking after all things media, website and recipe development.
